I clearly suck at posting recipes soon after I've made them. I generally forget about it until I go to make the shopping list for my next batch of experiments, which is precisely what I was doing tonight, lol.
As part of my quest for the perfect mac and cheese, I tried out this "grown-up" version with caramelized onion and goat cheese. It's certainly not a substitute for the old-fashioned homemade kind, but it's a new and different pasta-plus-cheese combo that works well. Granted, since I made it ages ago, I only vaguely remember what it tasted like, but I think it was good!
In the "semi-homemade" category, this sweet and sour chicken is a quick and easy meal, even if you use real chicken instead of the frozen popcorn chicken. It's a good use of leftovers from a roasted chicken, or you could always stir-fry some chicken with the veggies. As I recall, I used some frozen veggies that were not bell peppers (I think it might've been snap peas, carrots, and onions?) because that's what I had in the freezer. So basically, this is less of a recipe and more of a vague suggestion, which you totally could've come up with yourself, haha. But it was even good microwaved the next day when I brought it to work for lunch, and that's always a plus.
In an effort to satisfy my cookie monster tendencies without all the calories, I wanted to try a dessert recipe on the healthier side. These banana and peanut butter ones came out reasonably well, although they were way denser than I anticipated. I was expecting them to spread out or puff up when they baked, but they did not. My dad (for whom they were baked, for Father's Day) called them "good breakfast cookies" because he liked dunking them in his coffee. Or maybe he was just being polite, who knows. You can definitely taste the peanut butter and the banana, but they're not very sweet at all, which my mom liked because she's a weirdo who doesn't like her desserts sweet, but it also makes them more of a breakfasty snack than something to satisfy a sweet tooth.
