Good lord, we haven't had a cooking post in a long time, have we? That explains why I have ton of recipes to post. Fortunately, they're all pretty good ones this go-round!

I tried this recipe for Balsamic Honey Chicken aaaaages ago. Before Easter, I think? Yes, in fact, it was, because I remember going home that weekend and mentioning the recipe to my mom, and she was all, "Oooh, that sounds yummy. Want to make it tonight?" and I was like, "Uh, no? I've been eating the leftovers for the last three days." Repetition aside, it's a pretty good recipe - I'm a big fan of fruit in savory dishes.

The Lemon Fettuccine with Bacon and Chives was a tip I got from [personal profile] per_aspera_ad_astra, who found the recipe and tried it first and then bragged about it, lol. I had planned to make it for a long time, and even bought most of the ingredients except the bacon, and just never got around to it. I think I saw the bacon as a somewhat insurmountable step, because I NEVER make bacon for myself, despite my love of all breakfast foods, so I didn't really want to buy a whole slab of it just for this one recipe. But I eventually gave in, so I expect more bacon in my future. By the time I did, however, my chives were somewhat less than fresh, so instead of chopping them up, I threw them in the boiling water and let the flavor infuse the pasta as it cooked. I don't really know if that's a valid technique, but whatevs. It was tasty. I'd make it again.

I'll be honest, I've never actually eaten Lobster Newburg, so I have no idea if this Shrimp Newburg recipe is a satisfying substitute, but as its own thing, it's great. I love the combo of creamy + sherry in general. Making the shrimp broth from the shells was new for me, but it tasted good and I think I picked most of the shells out of it, lol. I'd perhaps be more cautious when serving it to guests, though.

I looooove peanut butter, and I'm pretty good at stir-fry, so Thai Pork and Peanut Stir-Fry was a sure winner. Even Chelsea liked it - she tried to lick my plate! I subbed snap peas for broccoli because that's what I had (as usual), but it worked just as well. Probably should have been served over rice, but I'd forgotten that I used the last of the rice when I made the Shrimp Newburg. Ah well. I bought more so I can make rice to go with the leftovers.
