For some reason, I've had an incredible urge to make my own smoothies, so I've been collecting some recipes to try. While I was sick, I made Ensure smoothies, which were pretty good if you need some extra nutrients in your diet. Today, I tried a tropical fruit smoothie, which was also pretty tasty.
Chocolate Banana Smoothie
1/2 cup vanilla Ensure powder
3 tbsp chocolate powder or syrup
8 fl oz cold 1% milk
5 ice cubes
1/2 ripe banana, frozen, cut into pieces
Tropical Fruit Smoothie
1/2 cup pineapple juice, chilled
1 cup diced mango
1 banana, sliced
2 tsp fresh lime juice
1/2 tsp grated, peeled fresh ginger
3 ice cubes
I don't think you need instructions, right? Dump it in a blender and blend.
Since I had the pineapple juice, and I'm on a fish kick, I was looking for a recipe for some kind of tropical tilapia something. I found this Pineapple-Dill Tilapia, which was okay, but I think it really could've used some actual pineapple along with the juice. It's pretty darn easy, though. Here's the recipe:
7 (4 oz) pieces of tilapia
3/4 cup pineapple juice
salt
pepper
dried dill weed
Spray glass Pyrex dish with cooking spray. Place tilapia in dish and pour pineapple juice over top. Sprinkle with salt, pepper, and dill weed. Bake at 375° for 15 minutes or until done. Fish should flake easily when pierced with a fork.
Serves 4-6 people.
As a side dish, I made Roasted Green Beans with Shallots and Hazelnuts, since I had leftover hazelnuts from the halibut recipe I posted last time. I liked the flavor combination of the beans and the hazelnuts, but I felt like the components didn't blend well shape-wise. Kind of the same problem you have when you use the wrong shape pasta. Rather difficult to keep everything on the fork. I've also never roasted beans in the oven before. If I'd been doing this without a recipe, I'd have sauteed the beans and shallots in a pan. Not sure there was any difference in taste.
