The annual Christmas cookie recap
Jan. 4th, 2013 06:58 pmI wasn't feeling much of the Christmas spirit this year, so I didn't get too creative with my cookie options. I snagged this recipe from
aerintine for my book club's cookie exchange, and they're OM NOM NOM GOOD:
Jamie's Peanut Butter Oatmeal Chocolate Chip Cookies
The Apple Butter Flax Seed Cookies, on the other hand, did NOT look pretty - in fact, before they were baked, they kind of looked like poo? :( Also, the batter was very wet, and so the cookies spread out a LOT and I sort of ended up with a few giant cookies that had a cake-like consistency. But don't be fooled - they taste like healthy. Not bad, though. But if you have a hankering for cookies, this probably would not satisfy. But at least baked they looked less like poo. :-\

Jamie's Peanut Butter Oatmeal Chocolate Chip Cookies
1 c margarine or butter
3/4 c packed brown sugar
3/4 c white sugar
1 1/2 tsp vanilla
2 eggs
1 1/2 c flour
1 tsp baking soda
1 tsp salt
2 c rolled oats
1 c peanut butter
2 c chocolate chips
Cream butter, brown sugar, and white sugar. Add vanilla, eggs, flour, baking soda, and salt. Mix well and then add oats, peanut butter, and chocolate chips. Drop 1 1/2" balls of dough on ungreased cookie sheet. Bake at 350 for about 10 minutes. Cool 2 minutes and then move to cooling rack.
Since I had the oats handy, I also made Frosted Oatmeal Cookies to take home to the family for Christmas. I decorated them with festive sprinkles since it was the holidays, and they came out really well, even though I ran out of powdered sugar and ended up with four unfrosted cookies.
