Cooking with Eowyn

Kind of slacked off on the cooking thing because I was trying to save money, but I have a few recipes to discuss.

I actually tried this guilt-free brownie recipe a couple weeks ago, but clearly was in no rush to recommend it, lol. It's not that great. I guess if you prefer your brownies more cake-like, it's worth a try, but I say the fudgier the better, so these really didn't do it for me.

The epic quest for the perfect mac and cheese continues! This four-cheese macaroni bake was decent, but not a contender for the top prize. I was a little skeptical about the cottage cheese (I'm a die-hard ricotta fan, being Italian), but you couldn't taste it at all. In general, though, the recipe was somewhat bland, which is a criticism I've had before with these traditional recipes. I think I need to be more adventurous in my mac and cheese experiments.

To go along with the mac and cheese, I made pork chops coated in French's fried onions (the stuff typically found on the ubiquitous green bean casserole). Now, I happen to think that those onions are one of the best food inventions ever (I could eat them plain like chips), so I thought this recipe was delicious. It's super simple, too. Of the three, it's the only one I'd recommend without reservation, haha. Now, if you'll excuse me, I'm going to go see what else I can put fried onions on...
